We used to have a lot of problems with the work Vn V8's getting hot. Never saw one blow up because of the heat. I was stationed at Echuca at the time and had to go warp factor to Cobram because of bushfires. It was a 45 degree day and the car was that hot, the aircon cut out and the gauge was sitting on red most of the way.
Is your thermo fan coming on? If not, there's a way to test it. Get a switch and wire. Connect two wires to the on/off switch and connect them to the wires on the thermo switch. Start the car and watch the gauge. Once it starts getting a bit above normal, switch on the fans by using the switch. The temperature should start to drop if your fan is working correctly. I had a VN V6 until recently when some idiot decided to shunt it with the wife inside but I never had a problem with the cooling system. If your thermostat (in the rear of the engine if series 1) is ok and the radiator is the same, it may be a corroded water pump not circulating the coolant properly.
